17th Brew - Fresh Hop Ale - August 30, 2008

I know we just brewed last week but the pilsner just kicked yesterday, which has left me with empty taps. The Saison is on as well as a gallon of barley wine, but I expect that to go fast. The Marzen is fermenting, but won't be ready for 7 weeks, so the only conclusion can be to make more.

In light of some homegrown hops that we have been harvesting, were hoping to make a fresh hop ale. John tells me that he picked 10 oz of wet hops this past week, which should result in 2.5 ounces of dried. Plus we have 4 ounces of dried from the first yearly picking. Hopefully we can pick a few more ounces on Friday evening or Saturday morning for use in the brew so we can get as much fresh hop as possible. As it is the majority of the brew will be from homegrown cascade hops.

So the idea is to create a cascade hop bomb. Something akin to Victory Hop Wallop or maybe something darker like Hop Devil. The question is what kind of beer will best bring out the hops and whether to add any additional hops from storage. I did an inventory and this is what I have in the freezer:

0.75 oz Northern Brewer Leaf
0.50 oz Warrior Pellets

Any thoughts on beer type or hop combination? I will figure something out real soon.

What recipes do you have that make heavy use of cascade? I like the idea of a darker hop delivery drink - maybe even a hoppy porter?

A hoppier version of Hop Devil sounds great for this.  Alternatively, an English October Beer would showcase any type of hop fairly well.  Here's a link if you are unfamiliar with the style:

Yea, I was thinking hop devil which could be good. I drew up a lighter one last night, but it's real rough. I'll past the details from BTP below:

Original Gravity: 1.070 (1.056 - 1.075)
Terminal Gravity: 1.015 (1.010 - 1.018)
Color: 9.2 (6.0 - 15.0)
Alcohol: 7.19% (5.5% - 7.5%)
Bitterness: 50.72 (40.0 - 60.0)

Ingredients:
22.0 lbs 2-Row Brewers Malt
3.0 lbs Crystal Malt 20°L
1.0 lbs Cara-Pils® Malt
1.5 oz Cascade (5.5%) - added first wort, boiled 0.0 min
1.0 oz Centennial (10.0%) - added during boil, boiled 90 min
1.5 oz Cascade (5.5%) - added during boil, boiled 60 min

Other thing I forgot to mention is that I have like 40 lbs of 2-row american pale that is older than my bad of pilsner, so it would be good if I could use a lot of this.
