Notes:
  • Used White Labs Bavarian Weizen Yeast WL351
  • Hose water at 73° therefore beer was not chilled well. Finished @ 82°
  • Pitched next morning when beer was at 76°
  • Gravity reading taken 11 hrs after pitch, temp at 75°

08:45 am Initial PH @ 8.17. Added 5 dropper of lactic acid
  PH 4.60. Dumped 3.5 gallons and refilled.
  PH 5.47. Added 1 tblsp Buffer 5.2
  PH 5.60. Added 1.5 droppers of lactic acid

07/16/2007 08:00 am At 76°, Pitched starter, oxygenated. Added yeast energizer
  07:00 pm At 75°. Bubbles once a second, gravity at 1.060.
    Tables very sweet with wheat overtones.
07/22/2007 07:12 pm Gravity Reading: 1.016, wheat taste with slightly off after taste. Bubbling every 5 seconds
    Added 5 cups of cherry juice. Will adjust if not enough cherry after a couple of days
07/29/2007 12:30 pm Gravity Reading: 1.010.
08/11/2007 06:00 pm Kegged. Gravity reading the same.
