Notes:
  • Pitched two 3/4 liter starters w/ 2.5 oz of DME each
    1. White labs Belgian Ale Yeast (WLP550)
    2. White labs California Ale Yeast (WLP001)
  • Dough-In was up to sparger
  • Boil started with 14.5 gallons with runnings at 1.020
  • 120 min boil without FWH
  • Produced 11.75-12 gallons
  • Therminator worked great except hop leaves clogged quick disconnects

  Added mash hop pellots and got some flow back into the HLT

10:08 am Started HERMS re-circulation
11:05 am Places FWH into the boil
11:13 am Mash complete, stopped re-circulation
  Started raising HLT temp to sparge temp 170°
11:20 am HLT reached sparge temp
  Starting transferring mash wort to the boil slowly
11:21 am Started the sparge
  Ran out of propane. Had to run to Home Depot to get more.
  End of sparge was below the target 170°as a result
11:35 am Started heating the boil
12:45 pm Sparge complete. 14.5 gallons collected.
  Runnings at 1.020. PH of boil contents 5.86
01:15 pm Boil started
01:57 pm First Hop addition. 13 gallons remains in boil
03:00 pm Second hop addition. 12 gallons
  Added Irish moss
03:15 pm Boil complete
  Chilled using therminator
  Pitched both starters and oxygenated for 3 mins

Fermentation Schedule

Date Time Description
03/10/07 ~05:00 pm Placed fermentor in basement with thermowell, etc, and heat wrap connected
    Left heat wrap on over-night to ensure it was working. Left at 67°
03/11/07 ~08:20 pm Fermentor up to 78°. Moved into laundry room and reconnected etc.
    Bubbling once a second. Gravity at 1.070. Tastes very hoppy.
03/17/07 06:30 pm Hydrometer reading 1.026. Bubbles once every 3 seconds
    Lots a flavor and aroma hops, slight bitter finish
03/22/07 08:15 pm Hydrometer reading 1.017. Slight sulfer from Belgian yeast
03/25/07 09:30 am Dumped 30 oz of trub. Bubbles 1 / 30 secs before dump
  11:00 am Added two ounces of dry-hop (Goldings and Centennial)
03/31/07 03:30 pm Filtered beer using 1 micron sediment filter from fermentor into two 5 gallon cornys using pump
    Final gravity: 1.014
