Notes:
  • Had to add more water than prescribed for turbid mash
  • Added 3 extra lbs of grain (2 pilsner, 1 unmalted wheat) to get grain bed level up
  • Abandoned turbid mash by 150 degree step in favor of HERMS due to temperature problems
  • Use two vials of WLP655 (Belgian Sour Mix), 1 per carboy. Also split a Belgian Ale vial between to carboys

  Transferred 2 gallons to stuykmanden (boil kettle). Moved wort from pot to boil.

Engaged HERMS to raise to for 162 step.

Rest #4 starte (162 degrees for 30 mins)

Transfered wort from stuykmanden (boil) to mash.

Quickly drained 4 gallons in 5 minutes from mash to boil

Heated mash to 170 for sparge using HERMS 
  Continued to heat HLT to 190 for sparge

HLT heat to 190 degrees complete
