Notes:
  • Used 2 vials of WL001 California ale yeast
    • One added with 2 Liter starter
    • Second added from the bottle
  • Mash PH right around 5.2
  • Slight boil-over after 1st addition
  • No irish moss was used.
  • 1/2 - 1 gallon left in kettle due to hog clog in bazooka tube, connectors, and chiller

08:24 am HLT fill complete
08:25 am Began heating HLT. Water at 48°
08:52 am PH initially at 8.2

  • Added 3 Tablespoons buffer 5.2, PH @ 6.44
  • Added 5 lactic acid droppers, PH @ 5.8
09:10 am HLT heat to 164° complete. 116° in 45 mins = 2.57°/min
09:35 am Started mash at 150°-152°
09:58 am Started recirculation. Delay was to get HLT back up to temp.
11:22 am Mash completed after 114 mins
  Started heating HLT to sparge temp.
11:38 am HLT heat complete
11:45 am Began transfer to boil kettle
12:12 pm Started sparging

  • Transfer to boil and sparge complete. Running's ended around 1.020
  • Began heating boil kettle
01:30 pm Boiling started

12/1/07 04:00 pm Fermentor place in laundry room. Wort at 67°, ETC set to 69°
  08:00 am Noticed heat wrap was connected to power instead of ETC. Now at 72°.
12/2/07 07:30 am Temperature stabilized back at 69°
    Bubble 3-4 times every 5-10 seconds. Seems to be a slow start.
12/6/07 08:30 pm Refractometer = 16.6 brix (1.0431 sg approximation)
    Bubbling 1-2 times a second
12/8/07 10:00 am Refractometer = 16 brix (1.0390 sg approximation)
    Bubbling once every 2 seconds
12/9/07 10:00 pm Refractometer = 14.4 brix (1.0282 sg approximation)
    Bubbling once every 4-5 seconds
12/11/07 07:02 pm Refractometer = 13.6 brix (1.0228 sg  approximation)
    Bubbling once every 12 seconds
12/13/07 07:15 pm Removed 50 oz of thin trube.
     Hydrometer = 1.033, Refractometer = 14.3 Brix (1.0282 sg approximation)
12/19/07 07:30 pm Dumped 32-50 ozs of trube
12/23/07 10:30 am Filtered with .65 micron filter. Kegged, pressure set to 30 psi.
    Hydrometer 1.032. Roasty, with long flavor. Bitter/grassy finish
